|  | Oats have a long tradition as a foodstuff. They were already cultivated in the Bronze Age, but it is exactly at the present time that oat bread is completely in fashion once again because of its special taste. Before processing, the glume has to be removed from the oat grain. Afterwards, the grains are steamed and kiln dried in a combined treatment process. This enables processing into flakes. As a result of the kiln drying, the keeping quality and the storage capability are improved, however, and roasted substances develop which provide the typical taste. For oat baked goods, the oats have to be processed together with bread cereals (e.g. wheat or rye), as the oat proteins cannot form gluten. Recipe Oat bread
