|  | Maize was domesticated in Central Mexico. As it is a staple food in many countries, it is the most important grain worldwide, even ahead of wheat and rice: maize bread is a frequently eaten and popular foodstuff. In addition to the yellow-coloured maize which is widely cultivated in Europe, red and blue varieties also exist. Different types of maize flour can also be found. In countries where maize is eaten less often, maize flour comes from milling maize. In countries where it is a food eaten daily, the seeds are treated specially in advance, so that the nutrients contained are more readily available and the taste and baking properties are improved.
