Malts from our own production

The raw material malt is a natural one. With flavouring characteristics such as caramel, roasted or spicy, it can cater for a wide range of applications in achieving a distinctive taste. But malt is capable of more! In addition to improved dough development, using malt leads to an attractive crust and crumb as well as an optimised freshkeeping of baked goods. This holds true for bread and rolls just as much as for confectionery baked goods!

What is extraordinary about IREKS: As a manufacturer of baking ingredients, we possess our own malt and malt extract production and have hence every processing stage in our hands. Rye, wheat, spelt and barley make the basis of most various malt products: in flour form and paste-like, liquid, light or dark-coloured.

Sourdoughs in three-stage method

Using sourdough offers advantages: ideal dough processing properties, invariably high baked goods quality and a taste full of aroma. That is why IREKS has turned towards sourdough about 100 years ago. Today, we manufacture our sourdough based on this long-term experience according to the traditional three-stage method. Selected lactic acid bacteria and a strictly monitored sourdough production lead to ideal conditions when it comes to the desired fermentation.

Beside the manufacture of tried and tested variants like wheat, rye or spelt sourdoughs, IREKS is always thinking up new ideas. Rediscovered raw materials such as green spelt or buckwheat produce remarkable sourdough varieties and taste adventures.
